OVEN DESCRIPTION
1.3.1
The ARCOS oven is a wood-bur-
ning oven with indirect fl ame and
continuous, ventilated cooking.
This feature distinguishes it from
other traditional ovens - with
direct fl ame - in that, the furnace,
being completely separate from
the oven, allows food to be coo-
ked while avoiding contact with
smoke, ashes, and toxic gases.

Furthermore, ventilation in the
cooking chamber the heat is
distributed uniformly to all of the
cooking levels..
1.3.3
The Exclusive Oven Sistem, (with
indirect fl ame) ,with respect to
traditional ovens, allows for the
simultaneous cooking of different
types of food without changing
their fl avors and smells,quite na-
turally the right cooking times and
temperature (see table).

DESCRIZIONE
FORNO
1.3.1
Il forno della Linea ARCOS, è un
forno a legna, a fuoco indiretto e
cottura continua ventilata.
Questa caratteristica lo distingue
dagli altri forni tradizionali - a fuo-
co diretto - in quanto, la camera
di combustione è completamente
separata dalla camera di cottura,
permettendo di cuocere i cibi evi-
tando il contatto con fumo, cenere
e gas tossici.
1.3.2
La ventilazione nella camera di
cottura distribuisce il calore in
maniera uniforme su tutti i piani di
cottura.
1.3.3
Il Sistema esclusivo, (a fuoco indi-
retto), rispetto ai forni tradizionali
permette di cuocere contempora-
neamente cibi di natura diversa
senza infl uenzarne il sapore e
odore degli stessi cibi, rispettando
naturalmente i tempi e la tempe-
ratura appropriata (vedere tabella
indicativa).
