The oven is made of AISI 304 BA
STAINLESS STEEL (Premium)
and AISI 430 BA STAINLESS
STEEL (Arcos) and may be com-
plietely disassembled and clea-
ned to guarantee hygiene.
The stainless steel guarantees
the non-toxicity even, also with
the use and the high temperatu-
res the surfaces change color and
becomes golden.

The steam valve permits
maintaining the correct degree
of humidity and temperature in the
Oven in order to bake and cook
desserts, bread, pizza, roasts,
gratins, etc. correct.

The smoke valve controls the fl ue
draught, conserving heat for a
longer period of time and reducing
wood consumption.

La camera di cottura in ACCIAIO
INOX AISI 304 BA (Premium)
e INOX AISI 430 BA (Arcos) ha
la possibilità di essere complet-
tamente smontata e lavata, per
garantire l’igiene.
L’acciaio inox garantisce sempre
la non tossicita, anche se con
l’uso e le alte temperature il colo-
re delle superfi cambia e diventa
dorato.

La valvola del vapore, permette
di mantenere il giusto grado di
umidità e temperatura nel Forno,
per cuocere correttamente dolci,
pane, pizza, arrosti, gratinati ecc.

La valvola del fumo si utilizza per
controllare il tiraggio della canna
fumaria, mantenere il calore più
a lungo e ridurre il consumo di
legna.
Nota: la valvola va chiusa quan-
do all’ interno del focolare non ci
sono più fi amme ma solo braci.

Lo sportello della Camera
di Combustione, ha una griglia
di controllo aria comburente, che
permette di regolare la combustio-
ne della legna visibile attraverso il
vetro.
